Since the 1800's, family farms across the Midwest and South, Oklahoma included, have made sorghum syrup.
Sorghum syrup is made from a different species of sorghum than what the sorghum grain (milo) is harvested from.
Sweet sorghum is grown for its tall, juicy stalks, which are then pressed to extract a sweet juice. It's then cooked down into a syrup, much like sugarcane.
Historically, before refined sugar was widely available in many rural communities, families throughout Oklahoma and the South grew sorghum and cooked its juice into a syrup each fall, making it a classic regional sweetener with deep agricultural roots.
It's a rich old-fashioned flavor that's been loved for generations.
In this caramel, we cook the sugar and sorghum syrup base to the point of barely burning it before introducing the heavy cream and butter base.
It creates deep notes of toasted caramel, warm molasses and buttery richness within our signature soft caramel recipe.
It's one of those flavors in our caramel, you cannot quite pinpoint, but you simply cannot get enough.
